The bourbon is combined with orange juice, brown sugar, and green chilies for a nice balance of sweet and spicy. Served with white corn grits, this dish has a southwestern (by way of Kentucky) vibe that will please the entire table.Makes 6 Servings what you’ll need: 1 tablespoon preferred vegetable oil2 shallots, sliced and divided1 cup orange juice7oz can fire roasted green chilies, drained and diced, divided¼ cup bourbon2 tablespoons brown sugar1 teaspoon fine sea salt, divided1 orange, sliced1 Tofurky Ham Style Roast with Amber Ale Glaze1 cup white corn grits¼ cup unsweetened almond milk how to make: 1. Preheat oven to 350℉. 2. For the glaze, in a small saucepan heat oil over medium high heat. Add half the shallots and cook until softened, about 5 minutes. Add orange juice, half the green chilies, bourbon, brown sugar, ½ teaspoon salt, and contents of amber ale glaze packet. Bring to a simmer and cook until reduced by half. 3. In a Dutch oven or deep baking dish with a lid spread orange slices on bottom of pan and top with remaining shallots. Place roast on top and brush with half the glaze. Pour ½ cup water into the bottom of Dutch oven or baking dish. Cover and bake 1 hour 15 minutes.4. Meanwhile in a medium saucepan combine grits, 3 cups water, remaining green chiles, and remaining ½ teaspoon salt. Cook, stirring frequently, until thickened to a porridge consistency. Stir in almond milk and set aside.5.
